Chai Shortbread Cookies

 
I absolutely love Chai tea. It's my go-to whenever I retreat to a coffee shop. This recipe is wonderful. The finished product goes perfectly with my homemade vanilla ice cream recipe :)
This is one of the few Chai recipes out there that doesn't require you to actually go out and buy some Cardamom. The recipe uses loose tea leaves that you can just cut open a chai tea bag to get.
 I used 2 bags of Twinning's Chai Tea.  
 
Chai Shortbread Cookies
  • 2 cups all purpose flour
  • 3 tbs loose chai tea leaves
  • ½ tsp salt
  • ¾ cup powdered sugar
  • 1 tsp vanilla extract
  • 2 sticks butter, room temperature
Prepare a sheet of plastic wrap before you begin.
 
Place flour and your tea leave into a food processor and mix until well combined. Add in Salt, sugar, vanilla, and butter until a dough forms. Pour this dough out on your prepared sheet of plastic wrap. Roll into a log about 3 inches (or less) thick. wrap and refrigerate for an hour.
 
one hour later....
 
Preheat the oven to 375 Degrees.
 
Prepare a baking sheet with parchment paper.
 
Remove from fridge and unwrap. Slice the dough into 24 discs.
Arrange on parchment paper and slide into the oven for 12 minutes.
 
If the edges are nice and golden they done :)
 
Let cool completely.
