Voila, Margarita cupcakes with a lime buttercream!
- 1 box lemon cake
- 4 eggs
- 1/2 cup oil
- 1/2 cup water
- 1/4 cup tequila
Mix boxed cake mix with eggs, equal parts oil, water, and Tequila (Might as well take a shot while you're at it.)
Fill the cupcake liners 3/4 way full and bake for about 18 minutes at 350.
now for the butter cream,
- 1/2 cup butter, softened
- 4-5 cups powder sugar
- 1 1/2 teaspoons lime zest
- 1 teaspoon vanilla extract
- 1/8 teaspoon salt
- 3 tablespoons lime juice
- 2 Tbsp. milk
With an electric mixer, blend butter, lime zest, vanilla, and salt until fully combined. Add in powder sugar one cup at a time, alternating with lime juice. If you need more liquid add the milk or half and half to reach your desired consistency.
You're going to want to lick the frosting right off the spoon, go ahead ;)
Let cupcakes cool completely before piping frosting, Buttercream will melt quickly if the cupcakes are even the tiniest bit too hot.
Garnish with more Lime zest.
